    pls elaborate... if you can remember what was that about, that is.. :) EDiots are pretty versatile cooks, or so it seems. Personally, i know i'm preparing some weird weird shit.. my cuisine is inspired by munchies and alcohol-infused visions, and it's never really the same.. but it's fun, always trying out something new.. our regional stuff is kinda strange(one of our main side dishes are dumplings), so i have to.. for example, the local potato salad is stuff of nightmares for most tourists.. :D

    @Solution @j15m Ok I didn't have everything I wanted but I needed a fresh batch of salsa so here we go.

    -Tomatoes/tomatillos. Normally I like a 50/50 balance but no tomatillos available, so tomatoes only will do.
    -Chilies. Again jalapeños were the only ones at hand, plus red chili flakes and a habanero/chili powder mixture with lemon juice, better than nothing. Usually I put more than 5 chilies.
    -Half an onion. Red, white, yellow, doesn't matter.
    -1-2 garlic cloves. Or one big fat garlic clove as shown above.
    -A handful of cilantro.
    -Salt, black pepper, oregano leaves to taste.

    Not pictured because not at hand: Half lime/lemon and half avocado. These two significantly change the flavor and consistency of the salsa.

    Place cilantro, half tomato, half jalapeño, half avocado, and quarter onion in a blender. Squeeze the half lemon in, add oregano, salt, red chili flakes and black pepper to taste.



    IMPORTANT: OPEN YOUR WINDOWS AND TURN THE VENT ON BEFORE THIS!
    Throw the rest of the ingredients in a pan and roast covered on medium heat until the tomatoes' skin starts to slough off. Turn the vegetables around once in a while so they roast more evenly.

    Dump the roasted ingredients into the blender.


    OPTIONAL STEP: To make up for the fact I barely had chilies, I threw some chili flakes on the still hot pan and returned it to the stove for them to roast. You better have those windows open and that vent on at this point, because you really don't want to breathe this unless you want to cough your lungs out:

    Fun fact: To punish naughty kids, the Aztecs forced them to breathe these fumes.

    The roasted chili flakes will add an extra smoky flavor and spiciness to the salsa.

    Your salsa is ready for consumption. You can omit some of the ingredients or add additional ones, you can not roast anything and blend it straight (this will give you a tangy, fresh-tasting salsa, although very watery too), etc. Experiment and see what you can come up with.


    Now we need some food to spread it upon...

    Homemade refried beans, scalloped potatoes with feta/horseradish dressing, pig ambrosia and scrambled eggs with baby spinach, onion, ham, topped with melted colby jack cheese. Not pictured: Steamy hot corn tortillas.

    Does the salsa keep at all with the avocado or is it like a use fresh only thing?

    It does keep well, provided you store it in a covered container inside the fridge after usage. Some oxidizing is to be expected, but if you don't leave it out all day it will be fine.
