Epic Omelette spread

    Like Omelettes? Especially on toast? But you don't want to go through all the trouble of making an Omelette every time you get that craving?

    The solution is here: Dr. Lloyd's Omelette Spread! Your instant omelette out of a jar!

    Here's what you need:

    8-10 eggs,
    500g (ca. 18 oz.) of sour cream,
    1 teaspoon of calcium lactate (not so easy to get; some baking powder is made of it, some pharmacies and drugstores also carry it)
    4-5 tablespoons of sterilized milk
    1 tablespoon of white vinegar

    add diced bacon, pickled vegetables etc to your liking, but do not let the fluid content get too high

    Basically what you do is mix the eggs with the milk and sour cream and prepare them as if you were making an omelette (mix 'em and stir 'em, then fry 'em). Add any additional ingredients at this point. Also add the calcium lactate and the vinegar.

    You will notice the "omelette" will not become solid, it will only coagulate to the point where it has a consistency like mayonnaise. Fill it into the mason jar - it is vital that you sterilize the jar beforehand, so wash it with boiling water!

    When the jar is filled, put the rubber ring and the lid on, and make sure it is firmly closed. Then put the jar into a water bath. SLOWLY heat the water until it boils, leave the jar in for some time (2-3 minutes should do just fine), then let the water cool off. This sterilizes the contents of the jar.

    If you store the spread in the fridge it should stay good for several weeks.
